Long Time No Blog

I’d like to apologize to any loyal readers that I have left out there in the blogosphere for my recent lack of posts. I have been cooking, although admittedly not on the same level as I normally do. I do have a few archived recipes that I should blog about soon but I’m not sure when that will happen. Let me take a moment to give you all my excuses for my absence so you will not think that I am simply a horrible, lazy blogger….

Excuse #1 New Job: I recently started substitute teaching to keep myself busy and make a little money. Surprisingly, I have worked everyday since the 3rd day of school and I’m totally exhausted when I get home most days. I have a new found respect for all teachers in this world. It’s hard work!

Excuse # 2 New Volunteer Position: I recently accepted a volunteer position called the Family Readiness Group Leader. Basically I am the go-to person for any questions, concerns, etc. that any of the spouses and/or parents of the soldiers in my husband’s unit have. I have to conduct monthly meetings and disseminate information to the families as it becomes available. It’s a huge time commitment and basically all of my time that I would be using for blogging is now going to this position. Hopefully things will slow down soon though and I can get back to blogging.

Excuse #3 New Dog: We recently adopted a 3 year old Terrier mix named Libby from a rescue shelter. She has brought so much joy to our house but it’s always an adjustment when you get a new dog. She’s absolutely adorable and so very well-behaved. I’m think I’m never getting another puppy again…it just feels so good to know that we “rescued” her and that we don’t have to potty train her!

Excuse #4 Absent Husband: My husband is at a month-long training session with his unit in preparation for their deployment to Iraq and it really affects my blogging because who wants to cook for themselves only?!? Plus, I will admit being at home in the evenings without him is a little depressing so even when I have intentions to cook it usually ends up not happening.

So I hope these excuses will help you understand why I’ve been so missing in action lately. I promise to start blogging again when time permits! Please stay tuned….


Our Anniversary

Last week on August 18th (yes I’m late) Alex and I celebrated our first anniversary of marriage. Time has just flown by and I still can’t believe it has been a year already! It has been hectic at times (moving three times in one year, adjusting to Army life, etc.) but I have loved every bit of it!

I had been thinking that I would have to celebrate our anniversary by myself because Alex thought he might have to stay out in the field so I was very pleasantly suprised when he was able to come home at 4:00pm that day! We started off by exchanging gifts. Alex gave me roses and a gift card for a massage which was HEAVENLY! I gave him a cigar humidor and a bottle of Gentleman’s Jack whiskey.

Then, we went out to dinner at a nice restaurant….well, nice compared to other choices where we live. Here’s a picture of us at the restaurant.

Then we went home and each ate a piece of our wedding cake that had been frozen for a year. It was suprisingly tasty, although it didn’t look so pretty anymore.



We also watched our wedding video and reminisced about what an amazing day it was. I wish I could get married again every single year (to Alex of course)! Here are some more photos from the big day one year ago.

Where’s my spread?

I am the host for this week’s Barefoot Bloggers event but sadly I will be posting it a day or two late. I chose Smoked Salmon Spread and I can’t wait to make it. This has been a busier week than expected and I haven’t had time to make it to the grocery store yet (you know how that goes). I am leaving town for the day in an hour or so and I’ll be back tonight. Hopefully I’ll make it to the grocery store tomorrow and have my recipe up by tomorrow night! Thanks for understanding and happy blogging!

Update on Technical Problems

It appears as though the red squares are only showing up when viewing my blog through Google Reader. I plan on transferring all my photos to another web host soon to resolve the problem but for now it will have to wait. We are leaving in a couple hours to go out of town for a wedding and to spend the holiday weekend with Alex’s family so there is no time for me to fix the issue right now.

In the time being, if you are dying to see real pictures you can go the blog itself (not on Google Reader) and they should still be showing up.

I must say that in a way this technical glitch has been a blessing because I never realized how many readers I had until now. I guess I always sort of thought that it was mostly just family and friends who kept up with it. Thank you to all of you who do read my modest attempt at a Food Blog on a regular basis. It was great to see some of you come out from under the cracks yesterday to let me know that you couldn’t see my photos. I appreciate all of your help in resolving this issue and I will definitely work on getting it fixed as soon as possible when we get back from our trip on Monday.

I hope everyone has a safe and happy Fourth of July weekend. Hopefully you’ll get to enjoy some of these:

Remember while you celebrate our country’s freedom to pray for our military troops who are fighting to keep our country safe. And if you could, maybe throw in an extra prayer for all the military spouses and children out there who sacrifice so much for our country as well.

Technical Problems

I would like to apologize to anyone who is only seeing red squares instead of photos on my blog. I have no idea what has caused this issue but I am trying to get it resolved. Yesterday they were appearing that way to me too but then this morning they went back to normal so I am hoping it will straighten itself out on its own over time.

If you are reading this and the photos are still showing up as red squares please leave me a comment to let me know. I’m trying to figure out if it is eventually going to work itself out or not. T

What was I doing ten years ago?

I was finishing up my 7th grade year. Ugh Junior High…not a time I remember fondly. This upcoming summer 10 years ago actually might have been the summer I spent in Los Mochis, Mexico staying with some family friends of ours. It was one of the first times away from my parents for more than like a week or two so I was VERY scared to go. It turned out to be one of the best summers of my life, though! I made tons of Mexican friends, crushed on some boys, went to the pool almost everyday, improved my Spanish greatly. etc.

What are five (non-work) things on my to-do list for today?

(Err….I don’t have a job right now so everything on my list is non-work related! Ha!)

-Clean the bathrooms (my least favorite cleaning job)

-Walk the dog (already did it but it was on my list)

-Mail back my Netflix movie so I can get another (my new obsession)

-Write thank-you notes from my birthday (another least favorite thing to do but my mom is nagging me….yes, she still nags me even though we live 3 hours apart and I’m married

-Put away laundry that I did yesterday

Five snacks I enjoy:

I’m not a big snacker these days but I still can appreciate a good one…

1. The new Cinnamon Wheat Thins….yum!!

2. Apples w/ peanut butter….I eat this for lunch sometimes

3. Any baked goods I made and are sitting around my house (right now it would be cupcakes)

4. Oreos…but they are dangerous for me so I try not to buy them

5. Cheese and crackers

Things I would do if I were a billionaire:

1. Buy a house.

2. Build my dream kitchen in said house.

3. Get a new car for me (hubby just got a new one).

4. Open my own restaurant or catering business and never have to get a “real” job again.

5. Travel the world, staring with Tahiti, Italy, St. Lucia, Greece, and Germany.

Places I’ve lived:

Jobs I’ve had:

1. Cashier at Sport Clips, a place for boys/men to get their haircut and watch sports on the TVs.

2. Spa Assistant at a spa in Katy. I laundered the towels, made the massage beds, kept things tidy, served Spa Lunches, etc. That was probably one of my favorite jobs b/c I got 90% off ALL spa services!!

3. Student Assistant at an office on campus at Texas A&M. I loved my co-workers at that job. If I had stayed in College Station I would have gone to work for them full-time.

4. Management Trainee for a rental car company. First “real” job after college and definitely my least favorite. I quit so now I’m job searching again. 🙂

I’m a Proud Mama!!

Ok I’m a little bit lame to be so excited about this BUT shortly after moving into this new house I hung some flower baskets from our front porch. Well, a little bird decided to build a NEST in one of the hanging baskets. How convenient because I can take it down and check on them everyday!! She laid her tiny, adorable little eggs and I had been checking back everyday to see if they had hatched. Wellllll, yesterday I checked and low and behold – there was a newborn baby bird in the nest!!!!!!!

See that little reddish pink, fury thing in there?!?! That’s a BABY BIRD!! He/she is not very attractive just yet with patchy feathers and skeleton-like body but I know he/she will be quite a looker when he/she gets a little bigger! The other 3 eggs haven’t hatched yet but I’ll be anxiously waiting for them to join the world.

Oh and don’t worry, I will be sure to post updates on my babies (whether your care or not)!

Movin’ On Up

I am just going to apologize for the lack of posts this past week and in the week to come. We are moving to Fort Hood, Texas! If you haven’t already figured it out, my husband is in the US Army and therefore moving is part of our lives now. For the past 3 months he has been stationed at Fort Huachuca, AZ and we have been living in a HOTEL ROOM without a dishwasher, oven, or a normal sized sink/refrigerator. It has been interesting to say the least. I will include some photos for your enjoyment.

Here is our TEENY-TINY stovetop with two burners that won’t even fit two pans on them at the same time so really it’s only one burner (oh and notice the lack of oven):

Needless to say, I am SO READY to get out of this hotel room and into a normal sized living space and kitchen. We officially check out on Wednesday (April 16th) and then we will spend a couple of days staying at my parent’s house in Katy, TX. Then we will drive to Fort Hood and try to get our hands on a house to rent (with a nice kitchen of course!). Once we have found said house we will be renting a UHaul and moving all of our junk from Katy to Fort Hood. I am sure while we are staying at my parent’s house I will make use of finally having an oven for the first time in months and will (hopefully) blog about what I bake.

Please stay tuned for yummy oven-cooked goodness in the days to come. “See” yall in Texas!!

P.S. To avoid being labeled an ungrateful b*tch, I will say I am throughly going to miss having a free, hot breakfast in the hotel lounge every morning and having my bed made and the room tidied by the housekeepers while I’m at work every day!

Back From Vegas

Well, Vegas was great! Unfortunately I was really bad about forgetting to take photos of all the wonderful meals we ate. Oh well! We visited almost every major hotel on the strip, ate at many great restaurants, gambled and ended up ahead (woohoo!), saw 3 amazing shows (Phantom, Love (the Cirque du Soleil Beatles show), and Le Reve, and spent quality time with my grandparents. It was an amazing trip! Sorry about my lack of food photos but here’s one non-food one.

Wynn Hotel Las Vegas

I probably won’t be updating for a few days because my husband and I are headed for VEGAS BABY! We are so so so excited! We’re staying at the Wynn and seeing a few shows while we’re there. My grandparents are meeting us there so we are really excited to spend some quality time with them. We hope to eat some excellent food while there too. I’ll try to take some pictures and post reviews if possible. Wish us luck at the Blackjack tables and we’ll be back on Tuesday!
